A native of the Windy City, Bayer’s culinary journey has taken him to the spotlight on popular television shows like Bravo’s Top Chef, Chopped, and Beat Bobby Flay. His impressive resume includes tenures at esteemed establishments such as Here’s Looking at You LA, Curtis Stone, etta, Sqirl, Tortello, The Publican, The Heritage Restaurant in Forest Park, B. Bayer’s passion for cooking was nurtured from a young age, spending his formative years immersed in the vibrant flora of his mother’s garden. However, it wasn’t until high school that he firmly decided to dedicate his life to the culinary arts. After honing his skills at Kendall College’s renowned culinary school, he embarked on a European adventure, staging in kitchens across Spain, France, Germany, England, and Italy. This invaluable experience laid the groundwork for his career in some of Chicago’s top kitchens, including the acclaimed Nellcote, the James Beard Award-winning The Publican, Tortello, and his very first venture, The Heritage.

There, he led the kitchens at etta, Sqirl, and Here’s Looking at You, before returning to his roots in Chicago in 2024 to realize his vision for bar Berria. This dream project features a dynamic American menu that reflects his innovative approach to seasonal ingredients and the culinary techniques he mastered abroad.
One of bar Berria’s unique aspects is its commitment to sustainability, with over 30 raised garden beds providing fresh ingredients. The restaurant employs preservation and fermentation techniques to promote local products throughout Chicago’s harsh winters. As the driving force behind bar Berria, Bayer focuses on fostering community support and developing bold hospitality concepts that resonate with diners.
