Olsen was born and raised in New Jersey, where he also attended Wayne Hills High School. During his schooling he played football and basketball, and was one of three finalists for the Gatorade Player of the Year award in his senior year. Also, the same year he was a USA Today First-Team All-American, finishing his high school career with a record of 27 touchdowns and 73 receptions.

In 2003 Greg played in the U.S. Army All-American Bowl, being listed as nation’s no.2 tight end the same year. He originally entered the University of Notre Dame, but soon decided to transfer to University of Miami while still in his first year of studies, and soon became a starter for the Miami Hurricanes. Apart from his interest in sports, Olsen was one of the players who participated in the university’s rap group called the “7th Floor Crew”, and performed under the pseudonym G-Reg.

In the 2007 NFL Draft, Olsen was selected as the 31st overall pick by the Chicago Bears with whom he signed a five-year contract. His performances saw Greg selected for the 2009 Pro Bowl, and named the Bears’ Player of the Year by Chicago’s Comcast SportsNet. He helped the team win their first 2011 play-off game against Seattle Seahawks, however, the same year he was traded to the Carolina Panthers. For his performances, Pro Football Focus (PFF) rated him as the best tight end in pass block efficiency and receiving for the 2014 season, and he was voted to the 2015 Pro Bowl. He proved to be an essential player of the team in 2015 when Kelvin Benjamin suffered an injury and was prevented from playing for the entire year, so Greg was asked to take his place.

After finishing the season, he was selected for his second consecutive Pro Bowl and the AP All-Pro second team. Olsen was also ranked 2nd best receiving tight-end in the NFL according to PFF, and 38th on the NFL Top 100 Players of 2016 list. In 2016 season he was named to his third consecutive Pro Bowl, after becoming the first tight end to record three consecutive 1000 yard receiving seasons in NFL history.

When it comes to his private life, Olsen married Kara Dooley in 2009 and the couple has three children. Greg has an older brother, Chris Jr. who played for the University of Virginia as a quarterback, and a younger brother, Kevin, who was signed with the Charlotte 49ers in 2015.
