Darian Schmidt, currently an Executive Pastry Chef at The Ned, is also a participant in the 2025 season of Bake Off: The Professionals. Prior to relocating to the UK in 2023, he gained substantial experience working at prestigious three-star Michelin restaurants in Germany.
From a very young age, Darian was determined to pursue a culinary career, declaring his intentions to his parents at just four years old. His culinary journey began with an apprenticeship at 15 in Adler, Germany’s oldest Michelin-starred restaurant located in Häusern within the Black Forest. He further honed his pastry skills through a second apprenticeship at Gmeiner in Appenweier, near Strasbourg.
Darian dedicated three years to Adler before transitioning to Hamburg, where he seized the chance to work at Restaurant Überfahrt at Tegernsee, a three-star Michelin establishment under the guidance of Christian Juergens. Over four years, he climbed the ranks from demi chef to executive pastry chef.
Darian then joined the two-star Schanz Restaurant in Mosel as an executive chef, where the team earned a third star. He then moved to London to work as the executive pastry chef at the three Michelin-starred Hélène Darroze at The Connaught before joining The Ned.

He is representing The Ned in the competition alongside Pastry Chef Yadira Jauffrineau.
Bake Off: The Professionals will return to Channel 4 at 8 pm on Tuesday, May 27, 2025. And returning for their tenth series are judges Benoit Blin, Chef Pâtissier at Raymond Blanc’s Le Manoir aux Quat’Saisons, and Cherish Finden, formerly Executive Pastry Chef of the Pan Pacific London Hotel.
