Laurence Louie, a Chinese-American culinary artist, is making waves as a contestant on Top Chef 2026. He owns Rubato HK Café in Quincy, where he offers an inventive twist on Chinese American cuisine. In 2024, he claimed victory on the Food Network’s Chopped in an episode aptly titled “A Little Taste of China.”
In 2011, Laurence completed a Master’s degree in American Studies from the University of Massachusetts Boston. His early career involved community organizing for a nonprofit in Boston’s Chinatown. An extended trip to China saw him learning Mandarin, joining a university basketball team, and apprenticing at a noodle shop, reigniting his passion for his culinary heritage in Southern China.
Before committing fully to the culinary arts, Laurence co-owned and cooked for Olio Culinary Collective, a worker-owned catering venture. Returning stateside, he embarked on a professional culinary path, securing a position at the acclaimed Oleana in Cambridge, Massachusetts, where he worked his way up to Junior Sous Chef under the mentorship of James Beard Award winner Ana Sortun.
Laurence expanded his horizons in London’s culinary scene, training under the esteemed Chef Selin Kiazim and eventually leading her flagship restaurant, Oklava, as Head Chef. The pandemic prompted a pivotal call from his mother about her Cantonese bakery, leading him back to the U.S. to consider its future.
Rubato
By 2022, he launched Rubato, a Hong Kong-style café that beautifully marries his Chinese-American heritage with sophisticated culinary techniques. Since its debut, Rubato and Laurence have garnered acclaim, with Laurence being a James Beard Award semifinalist for Best Chef in the Northeast in 2024, earning the StarChefs Boston Rising Star Chef title, and the café securing a spot on Bon Appetit’s 2023 Best New Restaurants list.
