Martin Baylis, the celebrated Chef Patron behind North Devon’s New Coast Kitchen and Restaurant Roku, has earned acclaim for his sophisticated culinary creations that blend British ingredients with delicate Japanese nuances. This year, Baylis is proudly representing the South West in the 2026 edition of the Great British Menu (GBM) on BBC Two.

Born in Germany to an English father and Japanese mother, Baylis grew up immersed in a rich tapestry of culinary traditions. His early life in Worcester was marked by diverse gastronomic influences. Later, he and his wife moved to North Devon, attracted by the region’s abundant natural resources. Here, Baylis has crafted a culinary philosophy focused on seasonal, locally-sourced produce.

Under his guidance, New Coast Kitchen in Croyde has garnered accolades, including recognition in the Michelin Guide and the award of 2 AA Rosettes for its innovative British cuisine. His latest venture, Restaurant Roku, also based in Croyde, offers a tasting menu that reinterprets British dishes with Japanese flair. The name “Roku” means “six” in Japanese, symbolizing both the menu’s structure and the restaurant’s commitment to methodical, flavor-focused dining.

Great British Menu

In the 21st series of Great British Menu, Executive Chef Martin Baylis joins forces with fellow chefs from the South West, including Ciaran Brennan of Osip, Mark Tuttiett from Da Terra, and Jeffrey Robinson of Harbour View House. Together, they aim to highlight the region’s culinary excellence.

The popular BBC show, hosted by Andi Oliver and judged by renowned chef Tom Kerridge, features 32 of the finest chefs from Britain and Northern Ireland. Competing across eight heats, these chefs aim to create spectacular dishes inspired by the British film industry with regional or national connections. The ultimate goal is to earn a spot at the prestigious grand finale. Baylis’s menu is set to honor the South West and its cinematic heritage.

The triumphant chefs will prepare their creations at a banquet for the film industry, hosted at St George’s Hall in Liverpool, which doubled as Gotham City Hall in The Batman.
