These nutritional heavyweights are a must-have in our diets because they are packed with vitamins, minerals, antioxidants, and fiber. According to Johns Hopkins, a leading private research university and hospital, “Avocado is a superfood packed with fiber and essential nutrients, such as potassium, which aids in promoting healthy digestive function. It’s also a low-fructose food, making it less likely to cause gas.”

However, it’s important to exercise portion control, as avocados are also “high in fat,” suggesting this “superfood” should be enjoyed “in moderation.”

To elevate your favorite scrambled eggs into a superfood breakfast, start by whisking your eggs in a bowl until they are fully blended.

Next, grab a slice of sourdough toast and spread labneh (a Middle Eastern strained yoghurt) across it, followed by layers of avocado, then season with salt, dill and basil. Press the mixture into the bread before turning your attention back to the eggs.

Place a frying pan over a high flame and pour in the whisked egg mixture; keep the heat high whilst stirring the eggs continuously with a spatula until they’re fully cooked and set.

Finally, pile the scrambled egg omelette atop the avocado toast; for an extra kick of flavour, garnish with additional dill, chilli flakes, or drizzle with honey for a touch of sweetness.

The recipe, posted on TikTok by toasted.table, has sparked considerable buzz online, with viewers raving about its appearance and taste.
