An Australian doctor has revealed the recipe for her favourite school lunchbox filler, which is chocked full of spinach and can be made in bulk for the week ahead.

Dr Preeya Alexander, a Melbourne-based GP known as the Wholesome Doctor online, shared the recipe for her spinach and cheese melts on Instagram.

The mum-of-two said both her three-year-old and her primary school aged daughter approve of the cheesy snack and happily eat them cold if they can’t be heated up.

‘My son has just eaten two after his sports class – they were cold. And my daughter loves them cold too, the cheese is almost more punchy! But you could do a thermos for sure,’ she wrote.

‘Both my kids ate this as an afternoon snack with my toddler repeatedly singing his version of ‘I ate a rainbow’,’ the doctor said.

‘My daughter was proudly declaring that the rainbows count for double because they’re homegrown,’ she added.

And making the melts is super easy, she explained, and they can kept in the fridge for a few days to make mornings easier.

How can I make spinach and cheese melts at home? 

1 – Place a handful of spinach on half of the wrap, then cover it with cheddar cheese

2 – Bake in the oven until cheese is melted

3 – Crack pepper and squeeze lemon juice onto the cheese

4 – fold the wrap over and cut it into desired portions

The mum simply puts a handful of spinach, in her case silverbeet from the garden, onto a tortilla before adding on ‘lots of cheese’,

She then pops them in the oven until the cheese melts. She then adds a healthy dash of lemon and some pepper before she folds the tortillas over and cuts them into bite-sized pieces for the lunchbox.

She joked that there is no such thing as too much cheese, unless you are allergic and that the dash of lemon should be so healthy some squirts into your eye.

The Instagram post was liked by hundreds of mums and dads who said their kids love the healthy snacks too.

‘These are what initially sent me down the melted cheese wrap rabbit hole. I have had varied success depending on what I’ve tried to hide in them,’ one woman said.

‘These are a favourite in my household,’ another mum added.
