The 24-year-old was on a routine jog when he was allegedly ambushed by a stranger, struck in the abdomen and slashed on the neck and chin.
Bystanders at the service station in Reservoir came to his aid and called Triple Zero while they tried to stop the bleeding.
Seven minutes later emergency services arrived.
His parents followed closely behind and were visibly shocked as he was checked over by paramedics.
One service station worker, who did not want to be unidentified, saw the injured jogger bleeding.
“It was shocking, I couldn’t understand what was happening actually,” the worker said.
“I just saw him coming and he was coming screaming here … He was saying ‘I got stabbed, I got stabbed, I got stabbed’.
It is understood the man was struck outside a nearby pizza shop on Spring Street in Reservoir
He ran more than 150 metres down the road to the petrol station and left behind a trail of blood.
“He was holding his tummy,” the worker said.
“I gave him a towel and paper towel to hold it, asked him to sit down and finally he sat down and then [the bleeding] stopped a little bit.”
The young man’s family said he’d just returned from an Anzac Day dawn service with his parents before his usual morning exercise.
Tonight, he’s in a stable condition in at the Royal Melbourne Hospital after undergoing emergency surgery.
The offender behind the incident remains at large and police are appealing for anyone with information to come forward.
